🍤 Spiced Prawn and Pickled Mango Parcels (Beauxji Edition)
🛒 Ingredients:
- 250g raw king prawns, cleaned and deveined
- 1 ripe mango, thinly sliced and lightly pickled in lime juice
- 1 red chili, finely diced
- 2 spring onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- 6–8 sheets of filo pastry
- 50g melted butter (for brushing)
- Salt and pepper to taste
- Fresh coriander, to garnish
🍳 Method:
- Marinate the Prawns:
In a bowl, mix prawns with olive oil, cumin, paprika, turmeric, garlic, ginger, chili, and a sprinkle of salt. Let marinate for about 15–20 minutes. - Prepare the Pickled Mango:
Thinly slice the mango and toss with fresh lime juice. Set aside to lightly pickle while you prep everything else. - Assemble the Parcels:
Lay out a sheet of filo pastry, brush lightly with melted butter. Place a few marinated prawns and some pickled mango slices in the center. Sprinkle over spring onions. Fold the filo into a parcel, tucking the edges underneath to seal. - Bake or Pan-Fry:
Place parcels on a lined baking tray and bake at 190°C (375°F) for 15–20 minutes until golden and crispy.
Or pan-fry lightly in a non-stick pan for that crispy-bottom, golden-top realness. - Serve:
Garnish with fresh coriander, extra lime wedges, and maybe a cheeky drizzle of sweet chili sauce if you're feeling fancy.
